So, I have hot pack canned as many things as I am comfortable canning and I want to move into low acid foods such as pumpkin, corn and carrots. The embarrassing trouble is... I am totally afraid of pressure canners. The heat, the hissing, the angry steam geyser that issues from the top. I love canned corn and my carrots will surly rot if left to themselves (oh all that hard work) and mmmmmmmmm pumpkin soup! Please help! Are there options for these veggies other than the kitchen steam engine? My freezer is packed with berries... so that kind of eliminates that option. Well, am I doomed to the dreaded whistle pig?
